buttercream rasRaspberry Buttercream - shown on popcorn.  Fruity, creamy, buttery describes this flavor.  It tastes so close to frosting you would think you are eating dessert.  True to form raspberry flavor is balanced by creamy butter notes.  “Fruity and sweet” remains a popular flavor profile in 2015.

As a Southern Favorite, this smooth and creamy cheese blends well with heat from different chili peppers with a zing of onion, garlic and other spices. Millennials Driving Change In The World Of Burgers

The Carolina Ingredients blogosphere is firing up again and this time it is about burgers and millennials. Pundits reveal millennials want spicy flavors and new exciting combinations, paired with healthier options like turkey or vegetarian and always including “fresh” toppings.

McDonald’s revealed they are testing “build your own” burgers in certain locations. Chains like 5 Guys continue to expand. Larkburger, the chef-driven burger concept in Colorado, has created a buzz in food trend magazines. Yelp even has “Best Burgers in [name your location]” for major cities across the US.

All of this hype has been sparked by the millenial generation to break the mold of the mundane burgers that we all got so accustomed to. 

This month, industrial seasoning distributor Carolina Ingredients worked to develop some new burger flavors as part of our ideation process. Our favorite was Green Chili Black Bean. Mild heat from the green chili and nuttiness from the black bean create a lovely flavor profile for our turkey burger. Additionally, the black bean flakes add great visual notes. This versatile seasoning blend can be used to make a meat based or vegetarian based burger.

Though our average sales cycle is six months to a year, we are able to work under very tight deadlines, as short as 1 month. Why the long average sales cycle? It takes time to bring a new product to market and get it right.

Pineapple and Brown Sugar Rub Conjures Warm Memories During Cool Months

We are moving into fall, when the mornings remind us that summer has again departed and falling leaves prepare us for winter.  Holidays are right around the corner and many of us yearn to locate to warmer locales where we can wait until crocuses begin to emerge from the ground, signaling a new season.

Spice distributor Carolina Ingredient’s most recent flavor innovation is Pineapple Brown Sugar Rub. Sweet acidity with warm spicy notes pairs well with pork or beef.  It conjures memories of fall gatherings with family and friends when applied to whole ham. Beef ribs take on an island festive flavor when coated with this blend and smoked, allowing us to imagine the sun above and sand below.

Southern Cuisine - A New Snack Seasoning, Spicy Pimento Cheese

Southern Cuisine is no longer found just in the south - its popularity is expanding as well known chefs begin to highlight traditional southern dishes and trends in their menus. Now, it is common to see pimento cheese used in other ways. No longer solely a dip or sandwich spread, you now find pimento cheese burgers, pimento grilled cheese sandwiches to deep fried pimento cheese balls. The Varsity, an Atlanta landmark, serves pimento cheese with chili on their hotdogs.

Pimento Cheese, comfort food, now has multiple variations --from changing the types of cheese to peppers in this lovely mix. You’ll find cheddar, jack, American, and even changes based upon “cleaning” out the refrigerator cheese drawer. Originally with pimentos, a popular crop grown in the south until the 1960’s, jalapenos, piquillos, and other peppers are used to transform this Southern dish into a fusion blend.

Carolina Ingredient’s ideation for October is Spicy Pimento Cheese. Smooth and creamy cheese blend plus heat from different chili peppers mix with a zing of garlic. We formulated this as a snack seasoning; however, we can modify this winner to be used as a blend in for sauces, soups or dressings. Even better, how about a spicy pimento cheese “Hot Pocket” type snack?

Sriracha Stir-up for Spice Distributors

Sriracha, one of the most popular flavoring choices and sauces, is back in the news to seasoning suppliers’ dismay. This time with the ruling that Sriracha production at the Huy Fong Foods’ factory in Irwindale, California is a “public nuisance.”

Ethnic Flavors Continue Upward Trend in Snack Seasoning

Ethnic flavors continue to be very popular in snack seasoning trends. We anticipate seeing the popularity of the pepper continue well into 2014. We’re no longer talking about just ancho and jalapeno, as peppers like hatch, datil, aleppo, and mini purple move into the mainstream.

Our R&D team is constantly developing new combinations to stay ahead of these trends.

  • Hatch Green Chili & Cheese – a New Mexican roasted, mild green chili compliments creamy cheddar cheese
  • Aleppo Pepper – a chili of complex flavor and mild heat, originating in the Middle East, builds slowly in this rub, allowing the other flavors to come forward
  • Hatch Carnitas – warm roasted flavors, combined with cumin and chili, create an exceptional rub for poultry or pork
  • Non-GMO Za’tar – this snack seasoning boasts an herby and bright flavor with sumac notes and sweetness from basil

Companies from Whole Foods to the Chipotle restaurant chain to General Mills’ Cheerios have announced a commitment to non-GMO products and labeling in recent months. A clear response to the voices of their customers, 2014 is poised to see this trend continue.
